Fado is not background music. It is a whole room going quiet at the same moment. We find the smaller casas in Alfama and Mouraria where fado happens unrehearsed, book a group table and make introductions before the first note. The music does the heavy lifting. We just make sure the evening doesn't end when the performance does.
