This particular event focuses on the concept of aging wine, and shows how even medium-priced wines can develop into exceptional wines when cellared properly. Cabernet Sauvignon is special because of its structure, depth and remarkable ability to balance power with elegance. Known for concentrated blackcurrant, cassis and dark berry flavours layered with cedar, tobacco and savoury spice, Cabernet develops complexity and character beautifully with age while still holding freshness and restraint. It’s also one of the great food wines, particularly with richly flavoured lamb dishes, because its firm tannins cut through richness while the wine’s dark fruit and savoury notes complement the depth and intensity of the meat. If you decide to drive and/or have a designated driver, 2-hour paid parking is available around Powlett Reserve, Darling Square, and the Fitzroy Gardens.
