Think you know pasta? Let’s take it one step further.
Join the Amsterdam Food Lab for a hands-on workshop dedicated to one of Italy’s most iconic and most satisfying pasta shapes: tortellini.
This isn’t a cooking class where you simply follow a recipe and watch the chef do the work.
You’ll make everything from scratch.
We’ll mix and knead the dough, roll it by hand, prepare the filling, learn how to shape tortellini properly, cook it together, and, of course, eat a lot of it.

What makes the perfect pasta dough?
How thin should tortellini dough actually be?
How do you create a filling that is flavourful, balanced and has the right texture?
And perhaps most importantly…
How do you fold a tortellini that actually looks like a tortellini?
We’ll dive into:

🥣 Choosing the right sauce & finishing
You’ll learn the techniques behind the pasta—not just follow a recipe—so you can recreate them in your own kitchen.
🍝 Then we eat
Once our tortellini are shaped, we’ll cook them together and sit down for a proper Italian-style meal (ragù will already be made upfront by the Italian master chef 🧑🍳).
Expect freshly made pasta, plenty of flour on the table and a relaxed atmosphere where it’s easy to meet new people.
